For 6 persons

Ingredients :

• 500g strawberries

• 6 tbsp. strawberry coulis

For the shortcrust pastry:

• 250 g wheat flour

• 125 g of butter

• 70 g of icing sugar

• 2 egg yolks

• 5 cl of water

• 1 pinch of salt

For the pastry cream:

• 25 cl of milk

• 1 egg

• 30 g wheat flour

• 40 g caster sugar

• 1 vanilla pod

Preparation :

• Preheat the oven to 180°C (th. 6).

Prepare the shortcrust pastry:

• In a salad bowl, blanch the egg yolks and the icing sugar until using a whisk. Add water and salt.

• Pour the sifted wheat flour into a second bowl. add softened butter, diced. Knead with your fingertips to a sandy consistency until all the butter is absorbed, quickly enough so that the preparation does not go soft too much.

• Add the mixture of egg yolks, icing sugar and water. Keep kneading until you form a ball of shortcrust pastry with your palms then mill once or twice to make the ball more homogeneous.

• On a floured work surface, roll out the pie dough using a rolling pin. Line a 25 cm diameter mold with this dough, line it with parchment paper and dried beans to bake it blind. Bake for 25 mins. If you make tartlets, reduce the cooking time. Keep warm.

Make the pastry cream:

• In a saucepan, boil the milk with the vanilla pod previously cut in half and scraped with the tip of the knife.

• Meanwhile, whisk the egg with the powdered sugar until the mixture forms a ribbon. Add the sifted wheat flour and continue mixing, being careful not to form lumps.

• After removing the vanilla pod, pour the boiling milk over the preparation by stirring well with a wooden spoon. Replace the saucepan over the heat and cook, stirring constantly. Stop cooking after boiling.

Prepare the pie:

• Pour the pastry cream over the bottom of the pie.
• Wash and hull the strawberries then arrange them nicely on the cream pastry chef. Finish by coating with coulis.
• Store in the refrigerator until ready to serve. Accompany whipped cream or vanilla ice cream!
