Pasta with speck, mushrooms and peas

Ingredients :

  • 300g. short pasta (Sedani)
  • 250g. by Ricotta Galbani
  • 100g. of Speck (or smoked raw ham)
  • 200g. button mushrooms
  •   250g. peas
  • Olive oil
  • 1 shallot
  • Salt and pepper

Preparation :

1- In a non-stick skillet, drizzle some extra-virgin olive oil and brown the finely chopped shallot over medium heat.

2- Once the shallot has browned, add the Once the shallot has browned, add the speck cut into slices Pepper slices and the washed and sliced mushrooms.

3- Brown everything for a few minutes and add the peas. Season with salt and pepper and cook for another 20 minutes, covering with a lid.

4- Cook the pasta, drain.

5- Work the Ricotta Galbani with two ladles of pasta cooking water until a creamy texture is obtained.

6- Pour the Ricotta cream and the pan-fried vegetables with the speck over the pasta. Mix well.
