Ingredients :

  • 300g. macaroni
  • 4 egg yolks
  • 250g. by Ricotta Galbani
  • 200ml. creme fraiche
  • 80g. bacon bits
  • 30g. of Parmesan Galbani
  • Olive oil
  • Nutmeg
  • salt
  • pepper

Preparation :

1- In a container, mix the fresh cream with the egg yolks and the parmesan. Add salt, pepper and a pinch of nutmeg.

2- In a non-stick skillet, brown the bacon bits over high heat for 5 minutes with a drizzle of extra-virgin olive oil. Meanwhile, cook the pasta until al dente.

3- Pour the golden bacon bits into the mixture of eggs and fresh cream. Then add the macaroni.

4- Complete the preparation by adding the Ricotta Galbani, mix and serve hot.
