Ingredients of muffins with caramel : 

For the muffin maker:

  • 200g dark dessert chocolate
  • 90 gr of butter + for the molds
  • 3 eggs
  • 40 g powdered sugar
  • 90 g of flour
  • 1/2 teaspoon baking powder
  • For the caramel:
  • 100 g powdered sugar
  • 20 Cl of liquid cream
  • 10 g of butter

Preparation of Muffins with caramel :

The caramel:

Heat the cream in a saucepan over low heat.

Pour the sugar into a saucepan and heat over medium heat. When the sugar begins to melt, mix by swirling the sugar in the bottom of the pan (without using a utensil, just shaking the pan while holding it by the handle) until all the sugar liquefies and takes a nice amber color.

Incorporate the butter off the heat and mix in, then the cream, paying close attention to the splashes. Book.

The muffin batter:

Preheat the oven to 170°C (th 5-6).

Break the chocolate into a saucepan and melt it over low heat with the butter. Let cool for 2-3 mins.

Add the eggs, whisking vigorously. Add the sugar, flour and baking powder, then mix until you obtain a homogeneous paste.

Butter your muffin tins and spread the batter in them, filling them halfway.

Bake for 20 mins.

Once out of the oven, unmold the muffins. Using an apple corer (with a straw, it also works but you will have a smaller hole, so less caramel, less gluttony), dig the middle of each muffin and pour the caramel into it before to serve.
