how to prepare the Cordon Bleu gourmet

 Cordon Bleu gourmet 😋



Ingredients for 3 people :

  • 3 beautiful chicken fillets (700 g)
  • 3 slices of VendĂ©en ham
  • 5 to 6 slices of thin slices of smoked bacon
  • A block of 200 gr of ComtĂ© (if possible a minimum of 12 months of ripening)
  • 2 eggs
  • 40 g of flour
  • 150 g breadcrumbs (homemade if possible)
  • 3 tablespoons oil
  • 20 g of butter
  • A tablespoon of milk
  • Fine salt/milled pepper

Preparation of gourmet Cordon Bleu:

Using the tip of a knife, remove any remaining small nerves and traces of fat from the chicken breasts.

With a very sharp knife, open the chicken breasts in half but without separating them.

Place a chicken breast on parchment paper and cover it with another sheet. Tap the chicken breast with a rolling pin to soften and spread it. Finish spreading it well with the rolling pin as for a dough.

Cut the rind of the Comté then cut it into thin strips using a paring knife.

Trim the fat from the ham.

Season the chicken breast with salt and pepper.

Garnish the chicken breast with half of the ham and bacon, leaving the edges bare.

Then garnish half of the chicken breast with a third of Comté

Put an egg in a dish with the spoonful of milk then beat together.

Pass the egg with a finger all the way around the chicken breast. Fold it over and seal the edges well.

Put the flour, the remaining egg with the second (beat them together) and the breadcrumbs in three different dishes.

Pass each cordon bleu in the flour, tapping them to remove the excess, the egg on all sides and finally the breadcrumbs.

Repeat the operation in the egg and flour and breadcrumbs to obtain a very thick breading.

Preheat the oven to 180°C.

Heat the butter and oil in a large skillet.

Brown the cordons-bleus in the hot fat on both sides.

Place the cordon bleu on a baking sheet, cover with aluminum foil and finish cooking in a hot oven at 180°C for 20 minutes.

Serve the cordon bleu as soon as it comes out of the oven.
